Paloma image

Sweet, sour, a little bitter, and salty, it’s got all four taste groups, plus ice, bubbles, and alcohol; what’s not to like?

Little is known about the origin of the Paloma, the most popular Tequila-based cocktail in Mexico, though it is loosely linked to the legendary Don Javier Delgado Corona, owner and bartender of La Capilla (“The Chapel”) in the town of Tequila, Mexico. At around 93years of age, Don Javier, who is said to have also created the Batanga or Charro Negro, continues to run his small bar.
